‘She put the Lime in the Coconut, she drank ’em both up’…
Who doesn’t love the Coconut Song performed by Harry Nilsson? This is one of those songs that you either love or hate, kind of like anything done by Weird Al Yankovic. For those Muppet fans of yesteryear, this version I remember vividly and still laugh hysterically every time I watch it.
The Coconut Song has been stuck in my head for the past week and I haven’t been able to shake it. Probably something to do with a mental image of me being set amongst palm trees with a white sand beach underfoot while drinking frosty cold mojitos and piña coladas.
So then I had a thought (which at times is dangerous for me or anyone around me)….why not make Lime Coconut flavoured Biscotti?? Sounds like just the antidote I needed to evict the song from my head.
To make your own Lime Coconut Biscotti, all you need is my Base Biscotti recipe and the following changes/additions:
ADD:
1/2 tsp. grated lime zest
1/2 cup fine (dessicated) unsweetened coconut
REPLACE:
1 Tbsp milk with 1 Tbsp freshly squeezed lime juice (about 1 lime)
1/2 tsp vanilla extract with 1 tsp coconut extract
Mix the batter as per directed in the Base Biscotti tutorial, but please note, the dough will be VERY and I do mean VERY crumbly. You will look at it in the bowl and not possibly think it will come to resemble cookie dough. But trust me, it will.
Dump the crumbly dough onto the counter and knead, squish, knead, squish the dough until it starts to form a ball. The heat from your hands is what makes it magically come together. Knead until it is a smooth ball, but stop when it starts to become sticky.
Wrap in plastic wrap and place in the fridge for at least 30 minutes or until you are ready to mold and bake. You can freeze the dough at this point for a rainy day, quick biscotti fix too.
Bake the dough as per the tutorial/recipe instructions and here you go…luscious, lime coconut biscotti to dunk into your tea…or mojito…or piña colada…
