Tomatillo Salsa for the Freezer

Don’t have the time to preserve my regular salsa recipe? Then you will love this one.  Start to finish it is done in less than 45 minutes.  If you are already making some for dinner, then freeze the rest in freezer jars and you have a fresh supply for later meals.

Quick Freezer Tomatillo Salsa

Ingredients

1 Lb Tomatillos, husked and washed (leave whole)
2 Jalapeño Peppers, seeded and roughly chopped
3 Cloves Garlic, peeled
1 tsp. Cumin
1/2 tsp. Fresh Cracked Black Pepper
2 Tbsp. Lime Juice

Directions

Place tomatillos in a large sauce pan, add water to cover (tomatillos float, so hold them down with your hand until the water covers them).  Add garlic and jalapeños.  Bring to a boil over high heat; reduce heat to medium-low and cook gently for approx. 10 minutes until tomatillos are yellow in colour all over.

Remove from heat and let cool for about 15 minutes.

Drain and puree tomatillo/pepper/garlic mixture with a stick blender or regular blender.  Add spices and lime juice, mix well.

Use immediately in your favourite Mexican recipe or let cool to room temp for a dip with tortilla chips.  Freeze any remaining in 8-ounce size plastic Freezer Jars.

Makes 4 x 8 ounce jars
