Grilled Chicken and Avocado Salad with Lime Vinaigrette Dressing

I just love a nice, big, fresh salad topped with some hot off the grill chicken.  Add some avocado, toss with a lime vinaigrette and add a couple slices of whole grain artisan bread and you have a well rounded meal.

This is super easy to throw together in minimal time and perfect for a hot, sunny day.


2 Boneless, Skinless Chicken Breasts, grilled and cut into strips or chunks
1 small Avocado, peeled, pitted and sliced into chunks
Red & Green Leaf Lettuce, torn into bite size pieces
1/2 cup Cherry Tomatoes, halved
2 Green Onions, chopped
1/2 cup red or yellow Bell Pepper, diced
1/2 cup Cucumber, chopped
Juice of 2 Limes
1/4 Cup Olive Oil
Salt and Pepper to taste


Arrange lettuce on two plates, divide tomatoes, green onions, peppers, cucumber and avocado evenly over the lettuce.   Top with chicken.

In a small bowl, whisk olive oil and lime juice, add salt and pepper to taste, drizzle over salads and serve.
