I love Guacamole…so much so, I could eat tubs of it everyday. Avocados are full of ‘Good Fats’ and a whole lot of other stuff that is good for you too.

I don’t know about you…but the Avocado is WAY tastier than the butter and you can do much more with it too….like my super-simple, easy Guacamole.

This recipe makes enough for one person, like when I need my guac fix. Can be tossed together in less than 5 minutes and promptly devoured with tortilla chips or crackers…or heck, just give me a spoon!
Ingredients
1 Avocado, peeled, pitted and roughly diced
2 Tbsp. Lime Juice (fresh if possible)
1 Roma Tomato, diced
1 Slice Red Onion, diced
1 Tsp Jalapeño, seeded and diced
2 Tbsp chopped, fresh Cilantro
Salt and Pepper to taste
Directions
In a bowl, combine all ingredients and mix well. Serve immediately (as if I expect to wait any length of time – NOT!)
I like my guacamole chunky, but if you prefer yours smoother, just mash the avocados with a fork before mixing together with the other ingredients.
