Jalapeño Poppers

For those that like a spicy zing to their Appetizers, look no further than these wonderful, Mexican flavour inspired munchies…. Sure to please even the toughest critics in the crowd.  A summer family gathering at my place isn’t complete without these and I never have any leftovers!

Ingredients

12 large, fresh Jalapeños, halved lengthwise and de-seeded

12 slices of bacon, cut in half (to make 24 slices)

1 small container spreadable cream cheese (low-fat or full fat, your choice!)

1 cup shredded Monterey Jack Cheese

Directions

Cook bacon until it is cooked half-way through (it will finish cooking on the grill/oven), drain on papertowels and set aside to cool.

Spread cream cheese generously into each jalapeño half, top with some grated Monterey Jack cheese and then wrap each one with a half slice of the bacon.  Secure with a toothpick.

Please on a greased, foil-lined cookie sheet and broil until cheese is bubbly and melted and bacon cooked through.  (Alternately you can grill them on the BBQ in a foil grilling tray)

Serve immediately.

Makes 24 appetizers
