Seeing as it is just hubs and I on the Homestead, this is one of those meals that makes lots for future dinners. I freeze in packages and pull out one when we want to satisfy the beef craving.
Ingredients
3 lb Beef Roast (Sirloin Tip)
1 Sweet Onion, quartered
3 Garlic Cloves, roughly chopped
4 Cups Beef Stock
2 Cups Water
Salt and Pepper to taste
Whole Wheat Rolls or Hamburg Buns
BBQ Sauce
Swiss Cheese Slices
Pickled Jalapeño Peppers (optional)
Directions
Place first 5 ingredients plus salt and pepper in a slow cooker, cook on low for at least 10 to 12 hours. I set mine to cook overnight for beef sammie dinner the next day.
To make Beef Sammies:
Shred 1/2 cup of beef per sammie into a medium bowl; heat in microwave on 50% power until hot.
Pour your favourite BBQ sauce over top, mix well.
Pile shredded beef on whole wheat rolls or use hamburg/sausage buns. Top with pickled jalapeños and a slice of swiss cheese.
Broil until cheese is melted and bubbly.
Serve with a side salad or Cajun Oven Fries
