I know it isn’t Monday yet, but seeing as this weekend is Easter weekend, I wanted to highlight our Sunday dinner before the actual day, plus, it gives me an excuse to show off the minute iota of Photoshop skills I have acquired lately…it only took me an hour to get those 3 little coloured eggs on the menu board and for that, I think I deserve a big high-five.
After this Sunday’s annual stuffing of excess food, by the way, didn’t we just do this a few weeks ago at Christmas?! sheesh, time flies… it will be time to get back up on that DIE-et Wagon and work off the pounds that crept on the past couple weeks while snacking with abandon on Mini Eggs and Hershey Kisses (totally guilty on the kisses).
This week’s menu is full of whole-grain goodness, veggies, lean meats and fish, and nary a cookie nor chocolate egg to be found anywhere. It is also time to get back into a workout routine as mine has fallen by the wayside lately due to too much on the go leading up to Easter. Now that the nicer weather has finally arrived, I don’t have to bundle up in my parka and mukluks to head out for a stroll, so get out there and make your heart proud and pound some pavement.
