Easiest Sweet ‘n Sour Meatballs

Sometimes you just need a no-brainer recipe for dinner, and this fits the bill in spades.  These are so easy, even your budding ‘Chopped’ 5 year old could make them.  No fancy ingredients by the dozen required either.  Only 3 simple, everyday ingredients and a slow cooker are needed to transform ho-hum meatballs into a wonderfully sweet and tart sauced dish worthy of chefs extra-ordinaire Scott Conant or Aarón Sanchez…ok, maybe not actually them, but your family will love them nonetheless!

1 500 ml jar Chili Sauce
1 500 ml jar Grape Jelly
2 Tbsp Lemon Juice
50 Meatballs (*see directions below)

Directions

*Make meatballs as per recipe above, but do not use pasta sauce to cook meatballs in.  Instead, pour 2 cups beef broth over meatballs and bake at 350°F for approx. 30 minutes.  Remove from oven and let cool 15 minutes.  Drain on paper towels and place into Slow Cooker.

DSC09162Whisk together the chili sauce, grape jelly and lemon juice until smooth.  Pour over meatballs and cook on low heat for approx. 2 hours, stirring occasionally.

DSC09166Serve with stir fried veggies and rice.   This makes a large batch as we like to portion out and freeze for future meals when rushed for time.  Enjoy!

DSC09167_AOh! and these also make excellent cocktail appetizers.  Just make the meatballs smaller and serve skewered on toothpicks.  Your guests will rave over them!
